I made my simple guac & served it with blue corn chips. :]
- 4 Avocados
- 1 Garlic Clove, minced
- 1/2 Jalapeno, diced
- 1/2 Yellow Pepper, diced
- 1/4 Red Onion, diced
- Cilantro
- Salt & Pepper
- Chili Powder
- Lime Juice
For the actual quesadillas I tried a different method than I usually do. When I make quesadillas, I grill them on the stove. Tonight, I decided to bake them… they came out fine but I missed the crisp of the stovetop method. Oh well, these were so good there will definitely be a next time.
- Wheat Tortillas
- Jack Cheese
- Feta Cheese
- Baby Portobello Mushrooms, sliced
- 1/2 Yellow Bell Pepper, sliced
- 1/2 Jalapeno, sliced
- Orange Bell Pepper, sliced
- 1/2 Red Onion, sliced
- Cilantro, diced
I sauteed the mushrooms in a little butter and towards the end added the chili powder, salt, and cilantro. I grilled the sliced jalapenos, peppers, and onions in olive oil until they were nice and soft. After toasting the tortillas, I added both of the cheeses, mushrooms, and veggies. They baked for about 5 minutes at 350.

I topped off the quesadillas with more veggies and more mushrooms. I loaded them up with sour cream, diced tomatoes, and my simple guac too!
YUM!!
